Chicken and Dumplings

So my grandmother makes the best chicken and dumplings ever. They do take a long time to cook though. I wanted to recreate that soup but faster in the instant pot. I did an ok job but they weren’t quite as good and I think that’s bc of the broth and chicken pieces.

See my grandma makes her own chicken broth by cooking the entire chicken in the water first, removing it, and then just shredding the meat back in. For the instant pot, I bought pre-made stock and just used chicken breast. Pre-made stocks aren’t as flavorful and thighs are often more flavorful than the breast. In the future, I’d cook an entire chicken in the pot in water and then shred the entire thing back.

Other than that I made my soup by sautéing onion, bell pepper, and celery. Cut up chicken breast chunks and browned them in the pot with salt, pepper, garlic, and dried parsley. Added chicken broth and pressure cooked 8 minutes.

When that was done, I added frozen corn and the dumpling mixture (bisquick, milk, parsley, and Parmesan cheese).

It was delicious! Will make again :)
