So I’ve been playing a lot of Let’s Go: Eevee lately on Switch and Pokémon Go on my phone. So that inspired my bento this week. So obviously the main part of the bento is Eevee rice. I made this by adding some ponzu flavored soy sauce to rice and shaped the head. I made the eyes and ears out of nori. It came out ok, but in the future I would make the ears out of rice too. So just 1 big Eevee instead of 2 medium Eevees.

I kept the Pokémon theme going by making diglett sausages in an edamame and corn salad. For the diglett, I just used small sausages, soaked some corn in red food dye water to get the pink nose, and nori eyes. The ‘salad’ is literally just plain steamed edamame and corn mixed together.

The last way I kept the Pokémon theme was making pokeball stakes. See are made with grape tomatoes and fresh mozzarella balls. They are cut in half and reassembled on a stake. We then added a strip of nori along the seam.

Lastly, just to round out my meal, I made baked salmon and seaweed salad. Salmon to increase my protein and keep me full longer. Seaweed salad to up my veggies and get more vitamins and minerals.
