I decided to try a new recipe today in my Instant Pot. It’s still been a bit cool here so I went for another soup. Plus, the Instant Pot does soup really well. This one was lighter and really delicious. I highly recommend trying it out. I started off by softening some onions. Then I added chicken breast pieces, salt, and pepper. After they were browned, I added some chopped garlic, red pepper, parsley, lemon zest, and chicken broth. I then pressure cooked the whole thing for 20 minutes.
Once that was done, I put it back on saute and added some pearl coucous. Once the couscous was done (roughly 5 minutes after it started boiling), I added lemon juice and feta cheese. The soup was really good. It was light and and I would definitely make this again. Of course I always enjoy a lemony treat.
