Easy Instant Pot Chicken Rice
One of the first meals I made in my instant pot was roast chicken (see blog post here). And this left me with a lot of leftover roast chicken. Now there are a lot of things I can do with leftover chicken, but this time I made chicken rice in my instant pot.
To make this, I added rice, the left over chicken, chicken stock, pepper, the onions and garlic from inside the roast chicken diced to the instant pot. Stirred it up and just let it pressure cook like normal for rice (though I did add a little extra stock). It was simple, filling, and flavorful. I’d highly recommend this for when you want something quick and easy.
Quick note: this was so easy bc I always pick a roast chicken and store the leftovers that way. If you store the entire carcass, it will take some time to properly pick over the chicken.
