Roast Lamb Leg with Potatoes
I thought making lamb could be fun. I’d never made lamb before so I thought it could be a fun challenge. Plus I could use my instant pot again. So I looked up a few recipes online and took the parts I liked of each.
I rubbed the lamb leg down with salt and pepper and seared it on all sides. I added majoram, mint, red pepper, soy sauce, worcestershire sauce, and garlic. Added a couple cups of broth to the pot and pressure cooked it for 50 minutes. Then I released, added some potatoes, and pressure cooked it another 10 minutes.
It was ok but not great. I should have made a gravy or mint jelly or something. It just wasn’t enough and needed a little more seasoning. It’s definitely WIP.
